Happy Monday Munchies! Couscous summer salad!
I love keeping cold salads in the fridge during the summer. I like to always have something refreshing that i am able to grab on the go. trader joes sells a delicious grain mixture of red quinoua, pearl couscous & orzo. it makes a wonderful side dish and an even better salad. when the 2:1, chicken broth:grain was almost done absorbing, i added a handful of cranberries, sliced almonds, frozen peas, kidney beans and chickpeas. stir generously. when all of the liquid is absorbed, put it in the fridge. if needed, drizzle a tablespoon of light olive oil before serving. the cranberries really brighten up the flavorful, healthy dish. yum-o!
