Grilled** Eggplant.
i’ve just begun grilling my eggplant and boy oh boy do i love it. brush each side of sliced eggplant with olive oil, keeping the skin of the eggplant on so it stays a little sturdier. after about 5 minutes over a medium heat, flip the eggplant and coat with your desired toppings.
pizza! (pictured). spoon a heaping tablespoon of sauce on your eggplant slice and top with a sprinkling of italian cheese. let the grill go until your cheese is melted. amazing.
bbq eggplant. spread a tablespoon or so of your favorite bbq sauce on your slice of eggplant. after about 5 minutes flip the eggplant and coat the other side with a little bit of sauce. after just 2-3 minutes flip the eggplant again to make sure both sides have the sauce soaked through. delicious with a side of pasta salad.
eggplant is great because of it’s meaty texture. it’s a vegetable that eat likes a meat. i love it.
**i don’t actually grill. i have a “griddle-er” a indoor george forman- type grill that i use…does the trick every time.
