Happy Monday Munchies! Avocado Pesto Spaghetti with BBQ Chicken Tofu!
Recent discovery: BBQ and avocado go great together. it’s my new pb&j, bbq&a. i made a creamy avocado pesto with some fresh basil, an avocado, salt, pepper, garlic, a touch of chicken broth & some olive oil in a food processor. (measure each to your your preference..i like 1/2 avocado to a handful of basil leaves, 1 bouillon cube/paste, a clove of garlic and 1/3lb of pasta) while boiling spaghetti (i used whole wheat) coat a fry pan in olive oil and slice up a couple cloves of garlic.
slice 1” squares, about 1/4”thick of firm tofu and cover each piece in bbq sauce. let them go to get crispy and flip them. the bbq sauce will scream, but it’s cool, add more bbq to the newly flipped, naked but crispy other side and keep em going. serve tofu and garlic over the al dente spaghetti, mixed with your avocado mixture. (reserve a little starchy water if “pesto” is still thick). avocado pesto is the best way of getting a cream-based sauce without the cream-based meal. mmm! love it! add some red pepper flakes for some nice spice 8;)
