Happy Monday Munchies! Egg noodles with sausage & edamame!
I recently had some guests over for dinner that i hadn’t seen in years. i wanted to make a delicious dinner that everyone could enjoy and decided to try this recipe, adopted from a pasta magazine i had read.
i bought wide, ribbon egg noodles from trader joes and cooked them as directed. in a pan i browned up some crumbled italian sausage with a cup of canned, diced tomatoes and white wine (+olive oil, salt & pepper) when the wine had reduced and the sausage was brown, i added edamame! the recipe called for lima beans but because they are out of season, edamame worked perfectly (it’s also easily found in a bag in the freezer of TJs) serve with your favorite italian cheese and enjoy! this is the best pasta dish i’ve had in years, my guests and myself were very impressed— i highly recommend it!
