Happy Monday Munchies! Quinoa “Mac” & Cheese!
Hola! I posted this on my instagram (@fashionosaurus) this weekend and lots of people wanted to know how and why and what and where and all of that, so here it is! 
serves 2 (recipe easy to double/triple for more) adapted from this 
3/4c quinoa1 1/2c water  (or chicken broth)1 egg1/2c milk3/4c cheese (i used a shredded italian blend- use what you’d like!)
optional:breadcrumbs for topping (optional)veggies for sautéingsalt, pepper & olive oil for seasoning 
rinse & cook your quinoa as normal with a 2:1 ratio, just like rice (i used chicken broth instead of water, though!) 
in a separate pan sautee some veggies if you would like to add that to your meal. i used chopped kale and minced onion with some olive oil, salt, pepper & a couple cloves of garlic. 
in a mixing bowl, scramble egg & milk, folding in your cheese, veggies & quinoa when they are ready. pour into a 9x9 casserole dish, top with breadcrumbs and bake until golden brown at 350-about 25 minutes. 
i want to try this again with a sharp cheddar and pepper-jack mixture, sautéing peppers & onions and making a mexi-“mac” & cheese! stay tuned! mmm! enjoy!
