Happy Monday Munchies! Mixed Up, Italian/mexican Polenta!
This is one of my more random dinners. also one of the nice things about living by/cooking for yourself..you don’t have anyone to impress but yourself. this was a tasty summer meal. light and refreshing..but you’ve definitely got to like polenta to like this. polenta is basically a log of moist cornmeal. it’s popular in italy as a pasta substitute. (to me, there is no such thing as a pasta substitute)
i bought a log of polenta, sliced it up about 1/4” thick and sauteed it with some olive oil in a pan, flipping it once it started to get darker on the underside. when they were done to my liking i topped them with my favorite homemade salsa & guacamole dip and dug in. it’s definitely a texture to get used to..i’ve had it for a couple different meals and i’m still trying to get used to it.
i like working new food into the rotation..every time i go grocery shopping i try to buy & cook something that i haven’t cooked before. it’s a fun way to expand your palate and see what you like. try it out!
