remember my recipe for quinoa mac & cheese? well, i’ve made it a couple more times because it’s so yummy, but the last time that i did i topped it with a plethora of amazing roasted vegetables. after roasting broccoli, beets, garlic, onion, pepper & brussels sprouts with some olive oil, salt and pepper for 40-60 minutes at 375 i took them out of the oven and hit them with a splash of balsamic vinegar. lay them on a bed of the delicious mac & cheese and you’ll be glad you did! yum!
